Freshest Seafood For All Your Seafood Recipes

With any seafood, the most important consideration is the freshness of the product.

Seafood such as clams, mussels, or oysters should be purchased live or freshly harvested. Canned clams can be used in recipes such as chowders, but fresh fish has a much fuller taste.

Buy Your Crabs and Lobsters Live!

Crustaceans such as lobster and crab should always be purchased live if possible, although fresh cooked is the next best option. Prawns and shrimp can be bought fresh, cooked, canned, or frozen, but when buying fresh always check the smell and look for any brown spots starting around the head. If there is a strong fishy smell, choose another fish market.

Fresh Seafood Doesn't Smell!

When purchasing fresh seafood such as salmon, cod, sole, or halibut there should be no fishy smell and the eyes should be clear. Cloudy-looking eyes are a sure sign of old seafood. When the flesh is pressed with your finger it should spring back if it's fresh. The older the seafood, the softer it will be. If the fish hasn't been cleaned, look for a bright red color on the gills.
