Pumpkin Pie Recipes

Pumpkin Pie

  • 1/4 teaspoon salt
  • 2/3 cup sugar
  • 2 teaspoons pumpkin pie spice
  • 2 eggs, slightly beaten
  • 1 2/3 cups milk
  • 1 1/2 cups mashed cooked pumpkin
  • 1 9-inch pie shell

Sift dry ingredients together and stir into eggs. Mix in the milk and pumpkin. Add filling to the pie shell. Bake at 450 deg. F. for 10 min. and then reduce the heat to 325 deg. F. for an additional 35 min. or until the toothpick inserted in the center of the pie comes out clean.

Instead of the pumpkin pie spice, you can use 1 teaspoon of cinnamon, 1/2 teaspoon of ginger, and 1/4 teaspoon of nutmeg.


Favorite Pumpkin Pie

  • 3 cups sieved pumpkin
  • 1/2 teaspoon allspice
  • 1/2 teaspoon ginger
  • 2 well-beaten eggs
  • 1 1/2 teaspoons nutmeg
  • 1 1/2 teaspoons cinnamon
  • 3/4 cup brown sugar
  • 1 cup condensed milk

Combine all the ingredients and mix very well. Pour the mixture into a 9-inch pastry shell.

Bake at 450 deg. F. for 10 min. and then reduce the heat to 325 deg. F. for an additional 35 min. or until the toothpick inserted in the center of the pie comes out clean.


Pumpkin Pie

  • 1 cup pumpkin
  • 1 cup sugar
  • 1 heaping tablespoon of flour
  • 1 egg
  • 1/4 teaspoon salt
  • ginger and other spices if desired
  • 1 cup milk

Combine all the ingredients and cook over medium heat until it begins to thicken. Pour into a 9-inch pie shell. Bake at 450 deg. F. for 10 min. and then reduce the heat to 325 deg. F. for an additional 35 min. or until the toothpick inserted in the center of the pie comes out clean.


Pumpkin Pie

  • 2 cups cooked drained pumpkin
  • 2 eggs
  • 1 teaspoon salt
  • 1/4 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 1 cup milk
  • 1/2 cup sugar
  • 1/4 teaspoon cloves
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ginger

Combine all the ingredients and place them in a 9-inch pie shell. Bake at 400 deg. F. for 10 minutes and then reduce the heat to 350 deg. F. and bake for an additional 30 minutes.


Pumpkin Chiffon Pie

  • 2 teaspoons unflavored gelatin
  • 1/4 cup cold water
  • 3 separated eggs
  • 1 cup sugar
  • 1 1/4 cups cooked and mashed pumpkin
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/2 cup milk
  • 1 9-inch Gingersnap Pie Shell
  • Whipped Cream

Soften the gelatin in water for 5 minutes. Beat the egg yolks and combine them with 1/2 cup sugar, pumpkin, salt, spices, and milk. Cook over low heat and stir constantly until the mixture begins to thicken. Add the gelatin to the hot pumpkin mixture and stir until the gelatin dissolves. Cool. When the mixture begins to thicken, beat the egg whites until they are almost stiff and mix in the remaining sugar, a little at a time. Fold into the pumpkin mixture and place in the pie shell and chill until firm. Cover with whipped cream and serve.
