Blueberry Bran Muffins

  • 3 cups natural bran
  • 2 cups whole wheat flour
  • 1/2 cup white sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 beaten eggs
  • 2 cup buttermilk
  • 1/2 cup vegetable oil
  • 1/2 cup molasses
  • 1/2 cup fresh or frozen blueberries

Mix bran, flour, sugar, baking powder, and baking soda together in a large bowl. Add eggs, buttermilk, vegetable oil, and molasses; mix just to moisten. DO NOT OVERMIX. Fold in the blueberries. Spoon into nonstick or paper-lined muffin tins, filling almost to the top. Bake at 375 deg. F. for 25 minutes. Remove from oven and let stand 2 minutes before removing from pan.


Bran Muffins

  • 2 cup shortening
  • 1 cup sugar
  • 7 eggs
  • 3 cup all-bran
  • 1/3 can molasses
  • 1/3 quart buttermilk
  • 5 1/2 cup flour
  • 2 teaspoons salt
  • 2 teaspoons baking soda
  • 1/2 cup baking powder
  • 3 cup milk
  • 1 cup of dates or raisins

Cream the shortening and sugar together. Add eggs. Sift flour, salt, baking soda, and baking powder together. Add all-bran, molasses, buttermilk, and milk and mix together. Add shortening and sugar. Add dates or raisins. Place in muffin tins. Bake for 18 minutes at 350 deg. F.
This muffin recipe makes 4 dozen large muffins.


Banana Muffins

  • 3 ripe bananas
  • 1 egg
  • 1 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/3 cup melted butter (cooled)
  • 3/4 cup white sugar or packed brown
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt

Preheat oven to 350 deg. F. Put bananas, sugar, and egg in a bowl and beat until smooth. Sift together dry ingredients and then add to the banana mixture. Add butter. Mix slowly until blended. Fill greased muffin tins. Bake for 15 minutes.
This muffin recipe makes 12 large or 18 medium muffins.


Harvest Muffins

Dry Mixture

  • 1 1/4 cups all-purpose flour
  • 1/2 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 tablespoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/2 cup golden raisins

Moist Mixture

  • 2 large eggs
  • 1/3 cup vegetable oil
  • 3/4 cup lightly packed brown sugar
  • 1/4 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/3 cup pumpkin
  • 1/3 cup shredded apple
  • 1/3 cup shredded carrot

Preheat oven to 350 deg. F. and prepare 12 muffin cups. Combine the dry mixture in a bowl. In a medium bowl beat eggs lightly and stir in all ingredients of the moist mixture. Add moist mixture to dry mixture all at once and stir just until dry ingredients are moistened. Fill 12 prepared muffin cups completely full. Bake for 30 minutes.
This muffin recipe makes 12 muffins.


Orange Chocolate Chip Muffins

  • 1 orange
  • 1/2 cup brown sugar
  • 1/2 cup chocolate chips
  • 1 teaspoon baking soda
  • 1/2 cup orange juice
  • 1/2 cup butter or margarine
  • 1 egg
  • 1 1/2 cup flour
  • 1 teaspoon baking powder

In a blender, blend the orange and orange juice (liquify). Add butter, sugar, and egg (liquify). Put in a bowl and add chocolate chips. Add flour, soda, and powder. Mix lightly. Place in greased muffin tins. Bake for 10 to 12 minutes at 400 deg. F.
