Low Carbohydrate Recipes

Home-Style Chicken and Gravy (Low-Carbohydrate Recipes )

  • 6 boneless skinless chicken breast halves
  • 1/2 teaspoon seasoned salt
  • 3/4 teaspoon paprika
  • 3/4 teaspoon garlic-pepper blend
  • 1 (12-oz.) jar of home-style chicken gravy
  • 2 tablespoons fat-free half-and-half or milk
  • 1 tablespoon Worcestershire sauce

Spray a large nonstick skillet with nonstick cooking spray. Heat over medium-high heat until hot. Sprinkle chicken with seasoned salt, paprika, and garlic-pepper blend; add to skillet. Cook for 4 to 6 minutes or until browned on both sides. In a medium bowl, combine gravy, half-and-half, and Worcestershire sauce; mix well. Pour the gravy mixture over the chicken. Cover; simmer over medium-low heat for 10 to 15 minutes or until chicken is fork-tender and juices run clear.
Makes 6 servings


Roasted Vegetables ( Low Carbohydrate Recipes )

  • 1 1/2 cups fresh baby carrots
  • 1 lb. small red potatoes, unpeeled, quartered (3 cups)
  • 1 medium onion, cut into thin wedges
  • 1 tablespoon olive or vegetable oil
  • 1 teaspoon dried basil leaves
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • 1 (14-oz.) pkg. Green Giant Select® Frozen Whole Green Beans

Heat oven to 425°F. Spray a 15x10x1-inch baking pan with nonstick cooking spray. In a large bowl, combine carrots, potatoes, and onion. Add oil, basil, thyme, garlic salt, and pepper; mix well. Spread evenly in sprayed pan. Bake at 425°F. for 20 minutes.
Remove vegetables from oven. Add green beans; toss to mix.
Return to oven; bake an additional 20 to 25 minutes or until vegetables are tender, stirring once.
Makes 6 (1-cup) serving


Spinach Rice ( Low Carbohydrate Recipes )

  • 1/4 cup olive or vegetable oil
  • 2 medium onions, chopped
  • 2 (10 oz.) pkg. frozen leaf
  • spinach, defrosted
  • 1 cup water
  • 1/4 cup rice, uncooked
  • salt and pepper to taste

Saute onions in oil until golden. Add spinach and water; bring to a boil. Add rice, season with salt and pepper; stir. Cover and cook over low heat for 15 to 20 minutes, until rice is tender.
This tasty, low-calorie, low-carbohydrate dish serves 6.


Banana Bread ( Low Carbohydrate Recipes )

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup wheat germ
  • 3 medium, very ripe bananas, mashed
  • 1/4 cup oil
  • 4 egg whites

Sift together the flour, sugar, baking powder, baking soda, and salt. Mix in the wheat germ. Add all remaining ingredients and beat until well blended. Place in an oiled 8 x 4-inch loaf pan. Bake at 350 degrees for about 1 hour.


Ham Roll-up ( Low Carbohydrate Recipes )

  • 8 thin slices of baked ham
  • 8 slices low-fat cheese (Mozzarella)
  • 16 asparagus spears, thawed if frozen

Roll each slice of ham around 2 asparagus spears and pin them with toothpicks. Place one slice of cheese on top of each roll and run under the broiler until the cheese melts. Serve immediately.
