Easy Chicken Recipes

Chicken Tetrazzini

  • 2 tablespoons margarine
  • 1 medium onion (chopped)
  • 1 clove garlic (minced)
  • 4 chicken breasts or legs
  • 1 can (10 ounces) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 tablespoon parsley (chopped)
  • 1/2 pound spagehettini
  • 1/4 cup parmesan cheese (grated)

In a skillet saute onion and garlic in margarine until tender. Add chicken and brown on both sides. Stir in mushroom soup, milk, and parsley. Simmer covered for 30 minutes. Meanwhile cook pasta according to directions, cooking only the minimum time indicated, drain, and put it into a baking pan. Arrange chicken pieces on top, cover with sauce and sprinkle with parmesan. Bake at 400 degrees F. for approximately 20 minutes.

Sweet & Sour Pineapple Chicken

  • 2 cups green pepper
  • 2 cups celery, sliced diagonally
  • 2 tablespoons oil
  • 1 tin (14 ounces) unsweetened pineapple tidbits (drained)
  • 2 cups drained pineapple juice with water added to make up
  • 5 tablespoons cornstarch
  • 2/3 cup brown sugar
  • 1/3 cup vinegar
  • 1/4 cup soy sauce
  • 4 cups leftover chicken, cut into cubes
  • cooked rice (as required)

Saute vegetables in oil until tender-crisp. Remove from pan. Combine pineapple juice with water, cornstarch, brown sugar, vinegar, and soy sauce in a saucepan. Cook, stirring constantly until the sauce thickens. Add drained pineapple, vegetables, and chicken. Heat and serve with rice.

Chicken Wings Indienne Style

  • 2 - 3 pounds of chicken wings
  • 2 tablespoons salad oil
  • 1 can (10 3/4 ounce) condensed tomato soup
  • 1/3 cup plain yogurt
  • 1/4 cup water
  • 2 teaspoons curry powder
  • 1/8 teaspoon pepper
  • cooked rice
  • chopped chutney

In a skillet, brown wings in oil, and pour off fat. Stir in soup, yogurt, water, curry powder, and pepper. Cover; cook over low heat for 20 minutes or until done. Stir occasionally. Serve with rice and chutney.

Chicken Chop Suey

  • 3 tablespoons butter
  • 3/4 cup celery (sliced 1/4 inch thick)
  • 1/2 cup onion (chopped)
  • 3 cups cooked chicken (cut up)
  • 1 can (19 ounces) chop suey vegetables, drained
  • 1 can (10 ounces) Cream of Chicken soup
  • 1 cup milk
  • 2 tablespoons soy sauce
  • 1/2 teaspoon salt
  • hot cooked instant rice

Melt butter in a saucepan. Saute celery and onion until just tender. Stir in chicken, vegetables, soup, milk, soy sauce, and salt. Cook and stir over medium heat until the mixture just comes to a boil. Reduce heat and simmer, uncovered for 5 minutes. Serve over rice.

Chicken A LA King

  • 3 tablespoons butter
  • 2 tablespoons chopped green pepper
  • 1 tablespoon chopped pimento
  • 1/2 cup sliced fresh mushrooms
  • 1 teaspoon grated onion
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon paprika
  • 1 3/4 cups light cream
  • 2 egg yolks
  • 2 cups chicken (diced)
  • 1 tablespoon sherry
  • 4 slices hot buttered toast

Heat butter in a saucepan. Add green pepper, pimento, mushrooms, and onion. Cook gently, stirring for 2 minutes. Sprinkle in flour, salt, pepper, and paprika, and stir to blend. Remove from heat and add cream all at once. Stir to blend and return to moderate heat. Bring to a boil, stirring constantly. BEAT egg yolks slightly and stir in some hot sauce a little at a time. Return to saucepan and stir to blend. Add chicken and heat thoroughly, stirring gently. Stir in sherry. Spoon on toast and serve immediately.
