Preheat oven to 375°F (190°C, Gas Mark 5). Lightly coat a 2-quart (2 l) casserole with cooking spray. Peel and grate the potato into a bowl. Stir in 1/4 cup (29 g) of the cheese. Spread evenly over the bottom of the prepared casserole. Bake for 15 to 20 minutes, until potato is browned and crispy. Meanwhile, brown ground sirloin, onion, and garlic in a large nonstick skillet breaking up the beef with a wooden spoon as it browns. Discard any excess fat. Stir in tomatoes with their juice, chili powder, and cabbage. Season with pepper to taste. Sauté, stirring, for a minute or two. If the mixture seems too dry, add 1 tablespoon of the bottled taco sauce, adding up to 2 tablespoons more, if needed, if the mixture seems too dry. When the potatoes are done, spoon the beef mixture on top of the potatoes. Top with remaining cheese and jalapeño slices (if using). Bake for 25 to 30 minutes, until the casserole is hot and bubbly. Serve at once. (This diabetic recipe makes 6 servings)
Mix Jell-O and boiling water. Add frozen raspberries (sugar-free), then the applesauce. Place in a round ring mold.
You may double or triple the amount for a larger portion. Assemble all ingredients. Cut and dice bread into small cubes and toast in the oven until brown and crisp. Beat egg and add to milk. Pour the mixture over the bread. Sprinkle the nutmeg and cinnamon over the top. Place the dish in a pan of warm water. Bake in a moderate 350 degrees oven until custard is set. Insert a knife into the custard. If it comes out clean, remove it from the oven. May serve warm with a lemon or orange sauce. Delicious.
Sift flour, sugar substitute, baking powder, salt, and spices into a mixing bowl. Combine egg, milk, and shortening, and add to dry ingredients. Blend until flour is moist. The batter should be lumpy. Do not over-mix. Fold in minced apples. Line, and fill the pan. Bake for 20 to 25 minutes in 375 degrees oven. Equals 1 piece of bread.
Combine cottage cheese, pineapple, and sweetener. Heat pineapple juice and gelatin until hot. Let cool. Combine gelatin mixture with cottage cheese mixture. Fold in whipped cream. Chill for at least 2 hours. This diabetic recipe makes 8 to 10 servings.
