Mmmm...Apple Curry Chicken

Curried chicken is probably the meal we have most often in our house. Of all the things we prepare for dinner nothing is as quick and easy as our curried chicken recipe.

But when fellow Canadian Nicole Rush visited our website earlier this month she sent us her favorite curried chicken recipe. I can't wait to try it. I'm sure this one might take the place of our regular one. I'll let you know.

Recipe Name: Apple Curry Chicken - chicken recipes
added Feb 05, 2005

Ingredients and Instructions:

  • 3 Tablespoons of Butter or Margarine
  • 1 Small Onion Chopped
  • 3 Apples Peeled, Cored, and Sliced
  • 3 Tablespoons of All-Purpose Flour
  • ½ Tsp of Curry Powder
  • 3-4 Boneless Chicken Breasts (Cut into Cubes)
  • 1 Cup of Chicken Broth
  • 1 Cup of Milk (I like to use Coconut Milk for added Flavour!)
  • Salt & Pepper to Taste

Preheat oven to 350 degrees. Saute Apple, Onion, Butter, or Margarine until tender. Add Curry Powder and Saute another minute, then add Flour and continue to cook one minute longer. Add Stock or Broth and Milk, and stir well. Pour Sauce in a backing dish over the chicken and bake in preheated oven for 45-50 Minutes. Serve with Penne Pasta!

  • 1/4 cup sherry wine

Cut chicken into pieces and brown in butter using a heavy iron skillet. Remove chicken and use the pan to brown pepper, mushrooms, onion, and garlic. Cover and allow to simmer until chicken is tender. Cook noodles separately and drain. Toss noodles with sauce and arrange them around the chicken.

Put chicken pieces in a casserole or Roasting Dish which has been oiled lightly. Sprinkle meat with salt, pepper, and paprika. Mix other ingredients and pour over the meat. Sliced carrots, celery, peppers, or other vegetables may be added.
I like to double the sauce recipe for a whole cut-up chicken and bake for approximately 2 hours.

Fricasse of Chicken (with potato dumplings) - chicken recipes

  • 5 pounds cut-up chicken
  • few stalks or leaves of celery
  • 2 onions
  • 1 carrot
  • 1 1/2 quarts hot water
  • 2 teaspoons salt
  • 1/8 teaspoons pepper
  • 1 bay leaf (optional)
  • 3 whole cloves

Potato Dumplings:

  • 2 cups cooked and riced or mashed potatoes
  • 2 tablespoons flour
  • 1 tablespoon shortening, melted
  • 1 egg, slightly beaten
  • 1 1/2 tablespoons finely chopped parsley or chives
  • 1/2 teaspoon salt
  • dash of pepper

Combine chicken, celery, onions, carrot, hot water, salt, pepper, bay leaf, and cloves and simmer gently, covering for 3-4 hours or until tender. (Careful to cook the chicken slowly, do not boil). Thicken the stock to make rich gravy. Make dumplings and cook them in the stew.

Dumplings: Combine potatoes, flour, shortening, egg, parsley, salt, and pepper and mix thoroughly. Divide into 12 portions and shape into balls. Chill. Drop into the simmering stew, being careful to drop each ball onto a piece of chicken, so that it will not be immersed in the liquid. Cover tightly and cook, without removing for 12 - l5 minutes.
This chicken recipe will serve 6.
