Cherry Pie

  • 1 1/4 cups sugar
  • 2 1/2 tablespoons flour
  • 1/4 teaspoon salt
  • 1 quart washed and pitted tart red cherries

Combine sugar, flour, salt, and cherries. Line the pie plate with pastry and add the cherry mixture. Cover with top crust. Bake at 450 deg. F. for 10 minutes. Reduce heat to 350 deg. F. and bake 25 minutes longer.

Fresh Cherry Pie

  • 1-quart cherries
  • 1 cup sugar
  • 1/8 teaspoon salt
  • 2 tablespoon flour

Stem and stone cherries. Mix sugar, salt, and flour together. Combine with cherries. Place in pastry shell. Cover with pastry, plain or criss-cross strips. Pinch edges together. Slash solid top to allow steam to escape. Bake at 400 deg. F. for 30 to 40 minutes until golden brown.

Cherry Pie

  • 1 recipe pastry for a 9-inch double-crust pie
  • 4 tablespoons quick-cooking tapioca
  • 1/8 teaspoon salt
  • 1 cup white sugar
  • 4 cups pitted cherries
  • 1/4 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1 1/2 tablespoons butter

Preheat oven to 400 degrees F. Place bottom crust in pie pan. Set top crust aside, covered.
In a large mixing bowl combine tapioca, salt, sugar, cherries, and extracts. Let stand for 15 minutes. Turn out into bottom crust and dot with butter. Cover with top crust, flute edges, and cut vents on top. Place pie on a foil-lined cookie sheet --- in case of drips!
Bake for 50 minutes in the preheated oven, until golden brown.
